Hospitality AI training: how The Hoxton trained its sales and revenue management teams with AI Sisters
The Hoxton Vienna and Florence.
Two cities, two teams, two very different jobs and the same observation every time: teams want to go fast, and AI is the number 1 lever!
At AI Sisters, hospitality has become one of our most active playgrounds. In recent months, we have formed teams at Accor, Dorchester Collection (the Plaza Athénée, Le Meurice), Hyatt, Les Airelles, Maison Pariente.
Palaces, lifestyle, luxury, business hotels. Very different worlds, but always the same need: Recover the hours lost on repetitive tasks to reinvest them where they really matter.
Here is how this mission unfolded in two acts.

Act 1 — Vienna: training the Directors of Sales from Ennismore
The context
The Hoxton, Mama Shelter, 25hours — if you know these names, you know Ennismore, Accor's lifestyle division that operates the group's most creative addresses around the world. AI Sisters was invited to their Annual European offsite in Vienna to host a full day dedicated to AI.
In front: About twenty Directors of Sales coming from all over Europe.
Profiles who sell hotel spaces to large groups for seminars, product launches, corporate events. Experienced, demanding salespeople who have no time to lose.
The problem we came to solve
Sales teams in the hotel industry spend a considerable amount of time on tasks that are not sales. Reporting, monthly presentations, proposal preparation, CRM update. And in the meantime, they're not doing what they're best at: going to customers.
The objective of this day was very concrete: show how AI can save a sales manager at least 2 hours a day. 2 hours recovered on repetitive tasks, reinvested in customer relationships and business.
What we worked with the sales teams
When we train sales teams, we always work on the same levers:
- Prepare a customer appointment in 10 minutes instead of one hour, with custom arguments
- Generate a comprehensive business proposal from a simple brief
- Create a compelling sales deck Without spending the afternoon
- Complete and operate a CRM without it becoming a chore
- Find upselling and personalization ideas for each customer
The Promptathon: the moment when everything changes!
It is always the strongest part of our business training. We put the participants in a real situation and we ask them to produce with AI.
In less than an hour, each participant comes up with a complete proposal, personalized, with pricing, a pitch and creative ideas.
The energy in the room is always incredible. When experienced salespeople see live that they can leave in 20 minutes, which took them 3 hours, The trigger is immediate!
What feedback do we hear the most? “Why haven't we been shown this before.”
The tools deployed in Vienna
- Claude — analysis of documents, reports, drafting of proposals
- Copilot — emails and office tasks in a secure environment
- Perplexity — competitive intelligence and research before an appointment
- Gamma — visual presentations generated in a few minutes
One tool per use, easy to remember, easy to integrate the next day!

Act 2 — Florence: diving into Revenue Management with AI
The context
The following week, off to Florence. The Hoxton chose us to animate a special session for their Revenue Management teams — the department that decides at what price to sell each room, at what time, on what channel.
Twenty participants. Real data. Timed missions. And AI as the only authorized tool.
Revenue Management: the job where AI is really changing everything
Revenue Management is an ultra-analytical job. Their obsession: Maximize hotel revenue by adjusting rates in real time according to demand, events, competition.
Concretely, their daily life: analyze dozens of data files (occupancy rate, average prices, performance vs. competitors), produce reports for management, prepare daily briefs for the General Manager, build presentations for investors.
A big part of their week is spent on formatting and writing tasks — not on strategy. GM briefs, reports, ownership presentations, anomaly analyses. With the right tools and the right prompts, All this is done in 20 minutes. Not in half a day.
The format: Show + Promptathon on real data
The participants were divided into 4 teams: Prompt Innovators, AI Explorers, Data Thinkers, Solution Builders.
6 missions to complete over the day, all based on real Hoxton STR data.

The 6 missions of the Florence Promptathon
Mission 1 — Anomaly Detective: In a single prompt, ask Claude to analyze dates when the hotel's performance was abnormally low or high, and identify the events in the city that explained it. Surgical precision.
Mission 2 — Morning Brief: Generate the daily brief of the General Manager in a few seconds — key metrics, alerts, and concrete action for the day. Fewer than 150 words, ready to send.
Mission 3 — Pricing Strategy: Build a 30-day pricing strategy by combining occupancy data, competition and upcoming events in the city. Week by week, reasoned.
Mission 4 — Investor Narrative: Transform a raw data table into an executive note for investors. Three paragraphs, zero jargon. The type of text that can be shared directly in a board meeting.
Mission 5 — Brainstorming: Generate 10 creative ideas to boost hotel revenue — new experiences, packages, partnerships — then formalize the best one in a structured concept.
Mission 6 — Concept Deck: Take the winning idea and generate a complete presentation deck with Gamma in a few minutes. Live pitch in front of the whole room.
The tools deployed in Florence
- Claude — STR file analysis, reports, writing executive narratives
- Copilot — emails and office tasks in a secure environment
- GPT chat — creative brainstorming and pricing missions
- Gamma — visual presentations in a few minutes based on written content
A tool by use, simple to remember, easy to integrate the next day.
What these two missions reveal about AI in the hotel industry
The Hoxton is not an isolated case.
The hotel industry is undergoing a silent transformation : The groups that train their teams in AI today are significantly ahead of the curve in terms of service quality, operational productivity and talent retention.
What comes out of Vienna and Florence is always the same thing: The trigger came in the first 20 minutes of the Promptathon.
When a salesperson sees that they can generate a proposal in 20 minutes instead of 3 hours.
When a Revenue Manager sees Claude analyze his STR data and identify a pricing anomaly in a single prompt.
It's no longer theory.
It's their work, their data, their job transformed directly!
What makes the difference is not the tool.
That is the method. A team trained with real use cases, on its own files and its own situations, adopts AI sustainably. A team that watched a generic presentation on ChatGPT forgets it in two weeks.
